
California Rolls are not typical Japanese sushi; in fact, they were invented in the USA. They are so-called Inside-Out Rolls, which are essentially rolled the opposite way to normal Japanese sushi, with the rice on the outside. The outer layer of rice is usually decorated with black or white sesame. For this recipe, we used colored sesame. This is roasted sesame, which is coated on one hand with a wasabi seasoning mix and on the other with a kimchi seasoning mix. Both types of sesame were mixed for the recipe.
In the Japanese mayonnaise, we add Yuzu Kosho. This is a typical Japanese chili paste mixed with Yuzu lemon. Besides the spiciness, it has a very fresh note from the citrus fruit. This distinguishes it from other chili pastes worldwide.
Ingredients for California Roll with colorful sesame and Yuzu Kosho mayo
- 100 g sushi rice (buy here)

Rice vinegar (buy here)

1 half Nori sheet or 1 whole Nori sheet to halve (buy here)

1/4 Avocado
- some lemon juice
- 4 THE Mayonnaise
- 25 g tuna
- 1 Zucchini
- 1/4 Paprika
- Sesame coated with kimchi (buy here)
- Sesame coated with Wasabi (buy here)
- Japanese mayonnaise
- Yuzu Kosho (buy here)
- Bamboo mat for sushi (buy here)
preparation
1. Cook sushi rice according to the instructions.
2. Season with sushi vinegar.
3. Remove the pit from the avocado and cut it into long strips. Drizzle with lemon juice to prevent browning.
4. Cut the other vegetables into long strips as well.
5. Prepare half a nori sheet or cut a whole nori sheet into two halves.
6. Mix kimchi sesame and wasabi sesame and place in a small bowl for further use.
7. Cut the tuna fillet into strips.
8. Wrap the bamboo mat with foil to prevent the rice from sticking to it while rolling.
9. Place the nori sheet on the bamboo mat. Spread the rice evenly over it.
10. Sprinkle rice with colorful sesame seeds.
11. Turn the nori sheet over so that the side with the rice is on the bamboo mat.
12. Place the strips of tuna, zucchini, avocado, and bell pepper in the center on top of the nori sheet.
13. Roll up the nori sheet using the bamboo mat. The rice side with the colorful sesame is now on the outside.
14. Cut the California Roll into the desired portion sizes.
15. Stir some Yuzu Kosho into the Japanese mayonnaise to taste. Since Yuzu Kosho contains hot chili, start with a small pinch. Then transfer to a small bowl.
16. Arrange the California rolls and serve the small dish with Yuzu Kosho mayonnaise alongside.
