Japanese sushi bowls
This way of serving sushi is little known in Europe, but it is the most convenient way to make sushi yourself without much effort. For this, ready-made sushi rice is placed in a bowl and ingredients commonly found in sushi (fish, seafood, vegetables, eggs, etc.) are added as an intermediate layer or as a topping on top.
The toppings are selected so that as many colors, textures, and flavors as possible are combined.
The bottom layer in the bowl consists of sushi rice. On top of that comes a thin layer of omelette strips, then another layer of sushi rice, and finally more toppings on top.
Preparation of the egg omelette:
Beat the eggs and salt them. Heat oil in the pan, add enough egg mixture to just cover the bottom of the pan. Cook over medium heat until the edge becomes dry and starts to curl. Flip the omelette and cook on the second side. Remove from the pan. Stack several omelettes on top of each other, roll them up, and cut into thin strips.
Fish and seafood toppings:

Cut fish fillets, e.g., from tuna, into small pieces

Quickly cook seafood such as shrimp

Cut other vegetables raw into fine strips or briefly cook them according to taste.
Shiitake-Topping:

Dried shiitake mushrooms
Soak dried shiitake mushrooms in water for several hours. Remove the stems of the shiitake. Pour the soaking water into a pan, add the shiitake, and bring to a boil. Add sugar, soy sauce, mirin, and sake. Reduce the heat and simmer until the liquid is almost gone. Remove the shiitake, let drain, and cut into very thin slices.
Nori-Topping:
Use pre-cut strips of nori sheets (Kizami Nori). Alternatively: Cut a nori sheet into very fine strips with scissors

Preparation Sushi Bowl:
Fill the serving bowl with a layer of sushi rice at the bottom. Learn how to make sushi rice the Japanese way here. Completely cover with omelette strips. Add another layer of sushi rice on top. Distribute toppings attractively on the very top.
Serve separately with soy sauce, ginger, and wasabi.
